Healthy Muffins That Are Gluten Free
Natural, healthy muffins? There is such a thing! These warm and tasty muffins remind me of Saturday mornings as a kid. This recipe is a much healthier version with no processed sugar or gluten.
Made with fresh apples, nuts, and cinnamon, Apex Apple Cinnamon muffins are heads and shoulders above packaged and processed muffin mixes. Using fresh ingredients not only makes a difference in the nutrient content and in the taste, it raises the energetic frequency of the food itself.
Did you know that canned, boxed, or otherwise unfresh food has no energetic frequency? This is because all of the “life” has been drained, extracted, and processed away. These muffins contain fresh and nutritious apples. The fresh apples infuse the mix with a good shot of vitamin C, A, and iron and calcium. In addition, the added cinnamon provides antioxidant and anti-inflammatory qualities, which helps the heart, lowers the risk of diabetes, and more.
In lieu of processed white sugar or other unhealthy sweeteners, this recipe is rich with natural guilt-free sweeteners, such as pure maple syrup and coconut.
Eating foods with as many nutrients as possible ensures that your body gets what it needs daily. That increases your energy, betters your mood, boosts your mind, and overall enhances your life. It is always a good idea to eat an array of foods to get the full spectrum of nutrients needed, since our body requires different vitamins for different purposes. Sticking with comfort foods is great, but variety is the spice of life!
- 2 1/4 cups almond flour
- 1/2 cup quick oats (gluten free)
- 2 tbsp. almond meal , (ground flax seeds) optional
- pinch of mineral salt
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/4 cup pure maple syrup
- 1/4 cup coconut oil
- 1/4 cup unsweetened almond milk
- 1 tsp. vanilla extract
- 3/4 cup finely diced or grated apple...with or without the skin (1 large or 2 very small apples)
- 1/2 cup walnuts or pecans, chopped
- Preheat oven to 375°F.
- In a large bowl, combine the almond flour, flaxseed meal, salt, baking powder and cinnamon, give a stir to mix.
- Combine and heat your coconut oil, maple syrup and almond milk on the stove top on low until the coconut oil is just melted, about 30 – 45 seconds (This is to ensure that everything is warm so your coconut oil will harden when coming in contact with chilled ingredients.)
- Pour the wet ingredients into the dry and mix until just combined.
- Stir in the apples and nuts, mix again. Batter will not be runny and should be on the thicker side.
- In the meantime, either line your muffin tins with liners or grease with oil.
- Scoop and fill each muffin cup just to the top.
- Bake for 17 – 20 min, until toothpick comes out clean and muffins are browned on top. Let cool a bit, remove muffins and enjoy.
- Makes approx. 10 muffins.
